...with Oatmeal Coconut Chocolate Chip Cookies


At the cafe at work there are these delicious oatmeal coconut cookies that always call out my name...and what can I say? I answer back by buying one of them and then eating every last crumb. I recently did a search online to see if I could find a recipe for these yummy little morsels.
Today I made a batch of these cookies and ate one...or two or three...and the day is not over yet!

...with the DIY coffee shop Iced Latte


There's no hiding the fact that I am a coffee shop "junkie". I looooove me a nice cup of jo from pretty much any coffee shop. I don't actually drink regular old coffee. I'm more of an espresso girl myself. I love lattes and mochas.
Now that the weather is *trying* to get warmer around these parts, I find myself wanting one of the cold espresso beverages from the coffee shop. Problem is, is that the darn things cost an arm and a leg, and now that I am on maternity leave and making zero dollars, I feel guilty indulging in a drink. So I decided I needed to come up with an alternative. Here's what I came up with:
1. Get a job at a coffee shop just so I could learn the recipes to all my favorite drinks, quit said job and begin making my own coffee shop drinks at home.
2. Befriend a barista and twist their arm until they gave me the coffee drink recipes, then ditch the "friend"...unless they really were a cool person.
3. Google the darn recipe and try em out.

So, after much thought, I came to the conclusion that option #3 was easiest and less time consuming :)
The first recipe I Googled was "Starbuck's Iced Vanilla Latte".
Luckily, the first recipe I tried out was a winner and lucky for you, I am sharing it!
Iced Vanilla Latte
Mix together:
4 pumps of vanilla syrup (approx. 4 tablespoons...I used 3 tbsp and it was plenty sweet)
2 shots of espresso
9 ounces of cold milk
6 ounces of ice

To me, this tasted like the REAL thing! Now I get to save myself $4.50 and make my own. Thank goodness too, because I really didn't want to have to dig out my resume and apply for a job!

...with the arrival of Baby Boy!

Wow...our sweet baby boy surprised us and arrived 2.5 weeks early! See, there was good reason for all my worrying to get the nursery set up on time...haha!

Emanuel Ricardo was born on Tuesday, April 19th, 2011 at 8:43 am. (At 37 weeks and 4 days)
He weighed in at 7 pounds 15 ounces and is 19 inches long.
He has very dark hair and chubby cheeks just like Elena did.

Here is the story of his birth. If you don't like specific, graphic details...then this is not the story for you - don't say I didn't warn you!

On Monday evening, the 18th of April, I was facebook-ing and shopping online because I wasn't tired. My husband was already in bed. I sent a friend a message on Facebook asking her about her experience with her second labor (she delivered at the same hospital that I would be and she used the same midwives as well) and she replied back right away. I read her reply and then decided to head off to bed at about 11pm.

I tossed and turned pretty much all night, which had been the usual for the last few weeks. I also had a ton of Braxton Hicks contractions during the night, which was normal for me. I felt baby moving a lot too. I got up several times to pee, which was nothing new. The only thing that was "different" was the fact that I had 2-3 bowel movements in the middle of the night - which is not normal for me. But I chalked it up to the fact that I had been taking iron supplements (which are constipating) but had stopped taking them several days prior and thought this was my body getting back to normal.

At 5am I woke up to a contraction that was REAL. Not a Braxton Hicks (BH). I'd had BH contractions so frequently during pregnancy, that I knew this was/could be the real thing. Not only that, but it reminded me of the contractions I had when I was in labor with Elena. This was a real contraction because I had to concentrate on my breathing and I had to stretch my body out nice and long in bed to "get thru it". What I wasn't certain of, was if the contractions would continue or if they would fade, especially once I got up and moved around. For the time being, I decided to try and get some rest, so I continued to lie in bed. The contractions continued but I wasn't timing them because I had my back to the clock. At 5:30 am my husbands alarm clock went off. As soon as he got up I said "babe, I'm having contractions". He was surprised and asked what he should do. I told him to continue getting ready for work because I wasn't sure the contractions would stick around. I was going to get up and walk around and see what happened.

While he showered I walked around the house, packing a few last minute things in our hospital bags just in case. I stopped every few minutes during a contraction to lean over a countertop, chair, bed....anything. I had to use some breathing techniques to get thru them and I swayed back and forth quite a bit. When my husband came back up stairs I think he was pretty shocked at how close together the contractions were (4-5min) and how involved I was in getting thru them already. He asked if we should call the midwife. I said no, let's wait a little longer. I wanted to hop in the shower and see what that did. I hopped in the shower and he took over timing contractions for me. He said they were 2-3 minutes apart, sometimes closer than that. A couple times a contraction would end and I'd start moaning again and he'd say "another one?". Yep, they were coming quicker and quicker. The hot water felt great on my back.
My contractions felt exactly as they did with Elena...like somebody was squeezing my insides out way down low in my abdomen. I also had back pain, but the lower abdominal pain was much more intense. Massaging my lower back and hips didn't bring any relief. By 6:30am I got out of the shower and I gave my husband the go ahead to call our babysitter to come over. He quickly packed the few things he would need and I changed into more decent clothing and brushed my hair and teeth. He also called the midwife and after hearing me moan/breathe thru a contraction she suggested we head into the hospital. Getting thru contractions took 110% of my concentration at this point. I tried various positions to get thru them, but standing and swaying my hips like a hoola hoop worked best...not great, but the best!

At 7:05 am we got into our car and headed towards the hospital. Contracting in the car was just as awkward and uncomfortable as I remember it with Elena. Once we arrived at the hospital I practically jumped out of the car and walked as quickly as I could towards the door...as I knew I would need to stop along the way to have a contraction and didn't want to make a scene with all my breathing and moaning. I had one contraction outside, leaning over the handicap "push plate" to open the door! I was admitted to a room right away (got to skip over triage - maybe because I am a 2nd time mom?!?!?). It was 7:25am when they admitted me.
My midwife, Alli, met us in the room and I stripped my clothes of right away. Alli did an exam to see how far dilated I was. I had been 3cm dilated at my 36 week prenatal appointment, wasn't checked at my 37 week appointment and now, I was 6-7 cm and 100% effaced. I was happy that I was that far along already. I was required to lie in bed while they did the 30-minute monitoring of the baby. Again, this was excruciating for me because my pain was not bearable for me in this position. I preferred to stand. While the monitoring was going on the nurse also asked all the admission questions, to which my husband was able to answer the majority of for me. It was at this time that I expressed my plans for a med-free natural birth to the nurse, alhough Alli was well aware what my plan was. The nurse did ask if she could put in a capped IV (I had one with Elena's labor), but before I answered, Alli said "no, she doesn't need one." She stayed with us the whole time, offering words of encouragement and telling me I was doing a great job.
As soon as the monitoring was done, I asked to get in the shower. This must have been around 8 am. I jumped into the shower and turned up the hot water. At this point Alli was leaving (she had been on call all night) and our other midwife, Cheri, came in. I felt as though I was in the shower for awhile, but it must have only been for 15 minutes or so. I drank a lot of water in the shower to stay hydrated. My contractions continued to come fast and furious. I asked to get out - not sure why. I was tired, but knew that lying down in bed was not for me! I dried off and stood over the toilet because I thought I had to pee. I walked back to the bedroom and leaned over the side of the bed for a few contractions. Because my contractions were coming one on top of another and I was having "pushy" sensations they had me get back in bed so I could be checked again. Cheri said I was 7cm and that baby was at a -2 station - so up pretty high still. I wanted to cry! I thought "all that pain and work and I haven't progressed much?" I asked if my water could be broken since it hasn't broke on it's own yet. With the next contraction Cheri broke it and I had the most intense contraction ever. With the breaking of my water baby moved down quite a bit and I continued to dilate. With each of the next few contractions I dilated fully to 10cm. This all happened over a matter of minutes. The contractions were VERY intense and at the end of each contraction my body was starting to push. Cheri continued to check my progress with each contraction and announced that I was complete and to keep pushing. She jumped up at this point and put on a gown, all while I continued to push with every contraction. While the pushing seemed to last forever my husband tells me it lasted for 15 minutes, if that. While a lot of women say pushing is a relief for them, for me it was the opposite. It was much more intense this time around, maybe because it was happening faster than with Elena. The so-called "ring of fire" felt exactly like fire! I thought my lady parts were on fire, anyways...laugh all you want!
Baby's head emerged and Cheri calmly said that the cord was wrapped twice around his neck. She unwrapped it quickly and I pushed him out the rest of the way. I remember looking down at him and first noticed that he had a head FULL of black hair and second, that he was blue and not moving. I did not feel concerned though, I knew he just had to take his first breath/cry and that he would pink up. Cheri never expressed an outward feeling of concern either (although maybe she felt it on the inside?), but she was calm and cool as she had Ricky quickly cut the cord and handed him to the nurse to be stimulated. The nurse called over the intercom system for a respiratory therapist to come to the room. Before they arrived Emanuel took his first breath and screamed....and continued to scream! Ricky was with him and said he turned pink (then red) instantly. He scored a 3 and a 9 on his APGARs. I then delivered the placenta (weird feeling) and was examined for any tears...luckily I didn't have any this time!
While I had never typed up a formal birth plan I knew what I wanted in my head, and my midwife "knew" also. I didn't have a mirror out this time (like I did with Elena) but there never really was a time to pull it out since everything happened so quickly. I also didn't pull Emanuel to my chest myself like I did with Elena, but that was because of the wrapped cord. I am glad that I didn't have an IV this time. With Elena the capped IV made it all to easy for me to ask for an epidural when I knew I really didn't want/need it (I didn't end up with an epidural with her even after asking for it though)! Thankfully my two midwives were awesome about supporting and encouraging my "birth plan". They are 2 really awesome ladies ;) Even my husband thought so!
So that's the story of how Emanuel Ricardo came into the world.
We are doing great and his big sister is loving him to pieces. She still points at my belly and says "baby brother", but she also points at him and calls him "brother" and loves to give him hugs and kisses.

...with Baby Boy's nursery tour!

Well, I can finally say I am at peace with how far the baby's room has come. This past week we kicked it into high gear and made a major dent in my little checklist of things to do! The room is 90% complete. All we are waiting on is an area rug for the hardwood floor, some paint touch ups and a few picture frames to be filled with art work. Other than that, I would say the room is ready for a baby!
Since I've only hinted at the theme of the room...I guess this would be the big reveal!

PENGUINS!

I made some penguin art using a large canvas and fabric...that's it! It cost a whopping $7 for the supplies and there is fabric left over, which will be used for another small art project in the room. Practically everything in the room is "recycled" - in the sense that we borrowed it, or it was previously used in the room when it existed as a guest bedroom. The only new stuff is baby related, like sheets, changing pad covers, etc.
Without further ado...here is the room - starting with Mr. Penguin!


Next up is the dresser/changing table area. The dresser is borrowed, as is the changing pad. We had the floating shelves in the room already, as well as all the picture frames. The 3-slot picture frame will have baby boys initials in them - which I hope to finish in the next few days. The small penguins are actually a 10-piece puzzle that is numbered from 1-10 and they nestle together. I split them up for a different look. The stuffed penguin on the shelf I picked up at the zoo!


The crib area - crib and mattress are borrowed too. Bought new sheets and a penguin pillow pet. Elena loves the pillow pet...so I see one in her future soon!

The book/toy shelf. Those colored tote bins still have random stuff in them...like cookbooks and camera accessories! I bought a bunch of penguin books - they are stacked on the bottom open shelf. The white ceiling tile will be hung above the shelf this week. Frames still need pictures....most likely will be baby pictures! That penguin rattle will end up in baby's bed I am sure.

The sitting area (it's located at the foot of the crib for reference). Pretty much everything in this corner we already owned, except the stuffed penguin (also from the zoo). We didn't really have anywhere else in the house to move the red chair to, so it gets to stay! Luckily it works with the overall theme. The square ottoman has a lid so we can store stuff inside of it. The damask curtains were what started the whole black/white theme back when the room was a guest bedroom...maybe not quite appropriate for a baby - but I LOVE them too much to get rid of them and don't have anywhere else in the house to use them.


That is pretty much it!
Now all we need is the baby!

...with anticipation!

I went to my 36-week prenatal appointment last Friday. My midwife checked me out and informed me that I am already 3cm dilated. HOLY WHAT?!?!?! I know that means nothing in the way of estimating when this boy will arrive. I could have been 0cm dilated and gone into labor that night. So 3cm means nothing really (other than the fact that when I do go into labor I am almost 1/3 of the way there...yay!). I could stay at 3cm until my due date (or after....PLEASE not after baby boy!) or I could dilate further in the next few weeks. With Elena I was 2cm at 36 weeks and by 39 wk 6 days I was 4cm already. So only time will tell. I haven't been having any real contractions yet, but I do have Braxton Hicks contractions all the time and they are getting stronger and almost uncomfortable. So all of this has sent me into overdrive to get things done earlier than originally planned. I am a planner. I like to have things done in a timely manner. The anticipation of what day this babe may or may not arrive on is driving me bonkers.

I don't want the house to be a mess when we leave for the hospital. I don't want the baby's room to be a complete mess. I don't want there to be a load of cloth diaper laundry sitting in the washing machine waiting to be dried when we head to the hospital.

Have I mentioned how much I hate anticipation? I hate NOT knowing the exact date this baby will arrive. I hate not knowing if I will be in a patient's room at work and my water will break. Will I be in the middle of grocery shopping when labor starts? Will my water break in public? Will it look like I peed my pants? I sound like a first time mom, huh?

Elena made this easy on me - labor started at home, in the evening and my water never broke. She also arrived on her due date...she must have known about her mama's issues with ANTICIPATION!

All I really know for sure, is that Baby #2 is getting closer and closer to arriving. While I am beyond excited and even secretly wish he came just a little early sometimes, I am also starting to feel the pressure of getting things done in time for his arrival.

Thankfully I was able to get all the freezer meals completed this past weekend, so that makes me feel somewhat accomplished...at least we won't starve after we come home with the little bambino! But the fact that I am still working on baby boy's room is another topic of concern. It's been a thorn in my side for weeks now. I mean, crib pieces are literally just lying on the floor. The dresser is put together, but nothing has been sorted and stored in it yet. It's also not in it's final resting place (because I don't know where I am going to put it until I know where the crib will fit). I am doing baby laundry today, so once that is done, I can start loading up the dresser drawers at least. The list goes on: I don't have a rug for the room yet, there are still wedding pics hanging on the wall that need to be replaced with more baby-friendly art work that's not even completed yet, the book shelf still has cookbooks and "adult decor" on it...*sigh*.

Now, I get that none of this is crucial in order to bring our child home...BUT... what's wrong with wanting the room to look complete when I bring our baby home and show him his room for the first time (like we did with Elena)...it's like a right of passage ;)

...with the productive weekend.

This past weekend my mom came to visit, which allowed to me to check a few things off my long list of "things to do before the baby arrives". The great thing about moms, is they always come bearing gifts. She brought with her a jar of fresh maple syrup that my dad tapped from the maple trees recently. She also brought 4 pre-made casserole meals to freeze.


My mom was able to entertain Elena while I kept busy. We ran a few errands to the craft store to pick up some supplies for a project I want her to crochet for me and we hit up the local spice store to replenish a few things I have used up while preparing meals for my maternity leave.

The rest of the weekend was spent finishing up the meat meals I wanted to get done.
It was productive to say the least, but I still didn't start/finish the baking, but such is life. I had wanted to bake some scones, muffins, pancakes, etc to make breakfast time a little easier/quicker. Hopefully this baby will stay put for another few weeks so I can slowly finish up on my days off. (This morning while Elena ate breakfast I was able to make some pancakes (with sweet potatoes) to freeze).

Here's what we accomplished this weekend. I have included some of the recipes...remember, these are all recipes I have tried before, so I won't be surprised when it comes time to eat.

All the meat was cut up, portioned into family sizes, marinated/seasoned and then vacuum packed in a Seal n Saver we received for our wedding 4.5 years ago!

Here's what now takes up residence in our deep freezer:
4 packages of ribs flavored with this seasoning
3 packages of hamburgers (some are teriyaki flavored using the same recipe I used for meatloaf, others I used a spice mix)
3 packages of boneless pork chops (I used this recipe to season the chops....will make the salsa at the time the chops are actually cooked).
flank steak for fajitas
2 flank steaks for kabobs
3 packages of veggies meatballs (these are cooked and ready to go)

Our freezer is pretty darn packed now, so I think it's safe to say that I am pretty much done preparing meals. I have decided not to make any casserole meals of my own, because I don't have the space and I want to relax a little before this baby comes too!

In other baby news, we received our infant car seat in the mail! My husband took it out of the box and left it sitting in the living room. I walked in to find this:

...where I'm making a list and checking it twice.

I'm a list maker. I love lists.

I have grocery shopping lists. Recipes I want to try lists. Things I want to buy lists. Birthday gift idea lists. Things I want to do before the baby arrives lists. Chore lists. You get the idea.

I even add things to my list that I have already bought/completed/etc...just so I can cross it off my list and make myself feel accomplished. Seriously. I do!

So my latest list is of things I need to pack in my hospital bag for when we make our trip to the hospital (29 days and counting...if this little one decides to show up on his due date that is!).

There are lists online of recommended items you should bring to the hospital with you (or not bring) etc. On some of the chat forums I read people always have recommendations too. I even received a list from the hospital I delivered at with suggestions and things to avoid.
But in reality...there were things that I did NOT bring with me, because they were things that people said you didn't need or that the hospital list said I didn't need. Guess what...I needed them!
So here's my working list of things that I want to be sure I have packed in my bag this time around! It's not complete...I'll keep adding to it as I think of things!

snacks for Ricky - I brought snacks for him last time, but I failed to tell him - so the poor guy starved from 4am (when I sas admitted) until my sister showed up after the birth (about 10-12 hours later!) with a Qdoba burrito for the new daddy....she knows the way to a mans heart!

cell phone charger - because for some reason my cell phone battery drains so fast inside of hospitals!

camera/battery/charger

Chapstick - hospitals are dry places and breathing thru contractions makes them even more dry!

headband for hair - last time when I was in labor, my hair was a hot mess...because I was a hot mess! I was hot and sweaty, in/out of the shower and jacuzzi tub, so needless to say I was a scary sight during labor (which is okay) and after labor when I saw my reflection in the mirror I almost screamed at the monster I saw staring back at me. I have long, thick hair and it was in my face quite a bit during labor - which was annoying to me. This time I plan to be prepared and have one of those elastic, workout-type headbands to help control my mane!

shampoo/conditioner/bodywash - believe it or not, this is one of those things people told me I didn't need to bring..."the hospital has all that stuff for you". Riiiiight. The hospital I delivered at had one bottle of "all-purpose" soap - meant to be used for shampoo, conditioner and body wash. I don't think so. My hair needs REAL conditioner. This time I am bringing my own!

flip flops - for wearing in/out of the shower while laboring (last time I only brought slippers - and in my labor induced pain I wore my slippers INTO the shower! I wasn't aware that I had done that until my husband told me.

slippers - for walking around during labor and after

granny underwear - what can I say....they come in handy post partum! I was severely misinformed with my first pregnancy about the amount of bleeding you might have after delivering, and my tiny little bikini underwear just didn't cut it!

comfy clothes - to wear after delivering the baby. I'm small and hospital gowns are HUGE.

pillow - I'm a pillow snob...I like squishy down pillows, so I'll bring my own!

brush - yep, I forgot this last time!

toothbrush/paste - forgot this last time too!

nipple cream - just in case

mini laptop/charger - so I can alert the world via Facebook that the little critter has arrived...haha!

baby book - so I can get the baby's feet prints documented

baby clothes - onesies, socks, jacket, hat, blanket

diapers - I'm bringing cloth diapers with me this time...atleast for the little guy to wear home. I haven't decided if I will put them on him before then, because I don't want any disappearing.

swaddlepod - to swaddle him up in

gift for Elena - the BIG sister is going to receive a special gift! More on that later!

So far that's it. Anything major I am leaving out?
